Grazier’s Edge is made with milk from Minnesota grass-fed cows and washed with St. Paul’s own 11 Wells Rye Whiskey.  It is a milder, buttery washed rind with meaty notes and a hint of spice from the rye wash.

Northeazy Tomme is made with whole milk from Minnesota grass-fed cows for a buttery and slightly tart paste. The rind contributes fruity, floral and mushroomy notes that will intensify with age, along with nutty & piquant notes in extra-mature wheels. The texture starts out slightly crumbly but smooths as the cheese matures.

WHAT KIND OF CHEESE DO YOU MAKE?

We make semi-soft, washed rind cheeses. We also make fresh cheeses: cheese curds, string cheese, and a whole milk ricotta. 

 

WHAT IS A WASHED RIND CHEESE?

Washed rind cheeses come from hand washing wheels of cheese with a mixture of water, salt, cultures, and—depending on your desired outcome for the cheese—some other ingredient such as tea, whiskey, or beer.

WHERE ARE YOUR FARMS?

We source our milk from Sunrise Meadows Dairy Farm in Cokato, MN and Stengaard Farm in Sebeka, MN. We're proud to have direct relationships with both of our farm families.

 

CAN I COME SEE YOU MAKE CHEESE?

Heck yeah! You can take a self-guided tour at FOOD BUILDING (where we make our cheese in NE Mpls) Tuesday - Friday between 11AM-5PM.
